First I have to address the fact that in the midst of working today I have been obsessively watching a person eat 500 starbursts on a live stream..... ALL DAY. Well not all day, obviously, but enough of the day to feel like I had to come straight home, put L in bed and watch the big finish. That was a mistake. After the 500th starburst came the gagging and the vomit and the regret. My regret. I stayed too long. 1 starburst too many. I'm trying to decide if it was worth it... it was.

No, that is not a life changing moment. Well, not for me. Probably for the young analyst it was really life changing. He now has diabetes. My life changing moment is MUCH more exciting, even if it didn't happen on a live feed. Guys... I made chicken exciting again. Wait for it... wait....

Chicken gets boring. Maybe because it's supposed to be so freaking healthy for you. It's also good for eating on a budget. You can get great hormone free chicken for a good price. Put it on the grill and you are getting healthier and healthier. Sometimes when you need a little more flavor than a breast, you can go for a thigh, which is what we did last night. Boneless skinless thighs. I was home with Landy yesterday and S was working late, so I was going to get started on dinner. We had chicken thighs and asparagus. All that was missing was some sort of plan. I brought the chicken thighs to room temp and started to trim the fat from them. Then I sliced open a knuckle, got a bandaid, and came back (blood = good cooking drama). Little EV Olive Oil and my standby, Uncle Chris' Gourmet Steak Seasoning.

Here is my moment of glory. The reason why I am glad I cook like a crazy person without a recipe.... I spotted a big container of fresh hummus in the fridge from this place we love called Fadi's. Picturing some sort of decadent, roasted, yogurt coated chicken, I take out the hummus and dump all of it in with the chicken. Then I mix and turn and mix and turn until it is totally coated in copious amounts of hummus.

Thank you. Really. I had NO idea what I was doing. When S got home as I was standing over a hot grill with hummus coated chicken, he looked like this:

Taking it back a few steps, before we actually got to the grill we washed and snapped the ends off of the asparagus. Added some grapeseed oil, kosher sea salt, and fresh ground pepper. Tossed it all around and we are ready to head out.

I had the grill nice and hot. I laid out the chicken thighs first since they needed a little more time than the asparagus.

Again, please don't be scared of the grill. The grill is your friend. It will make your life easier if you just let it. Since you have already met the grill, please meet the grill's good buddy, grill wok. It is what the asparagus is about to go into.

After checking that the thighs are coming away easily from the grates, I know that they are ready to turn. Here is what that looks like:

Next we are getting ready to take off the asparagus since it is getting some great little char marks and has turned a bright green delicious color.

The chicken thighs came off a few minutes after the asparagus and looked somewhat like fried chicken. Definitely a great sign.

The chicken was EXTREME! Like possibly the best chicken I have EVER
tasted. You could taste the grilled hummus all over this and it was even
more juicy than chicken thighs usually are. I had to force myself to
stop eating and remind myself I had a toddler to feed. I could have
STUFFED MY FACE.I can't even explain what happened or how the hummus got into all of the little spaces and would just come out with this insane flavor. Chicken is a whole new world now. I have rediscovered it. Life will never be the same again because Hummus Marinated Chicken is now a staple in our household. It is something I will continue to play with. What if you baked chicken with a hummus marinade? What if you marinated it overnight? Sorry. I get excited about food. S ate it using the butter lettuce like a wrap. I just can't stop thinking of all of the ways I am going to use this. INSANE.
Whew.. time to calm it down. It's almost Friday guys... I'm having a killer play date tomorrow with my friend S and her daughters AND Olympic Track and Field starts tomorrow. That's the stuff that dreams are made of. ALSO, if you want a free pie sent your way, it's just this easy... like the Raising Texas Facebook page and then like and share the posts. When we get to 50 likes, the winner will be announced. My mom was in the lead (she's supportive like that) but she has been ousted. Things are getting exciting. ReplyDeleteI have cooked the past two nights (is it bad that I can't remember the last time I cooked two nights in a row?) and for the first time ever I did not measure anything. This is huge! and made me think of you, you are inspiring me with this blog :) Great idea with the hummus, I'm trying it in the oven since we don't have a grill yet. Will let you know how it turns out.
